National Waffle Day!

A friend of mine gifted me the Unofficial Disney Park Cookbook. There are a few yummy treats I can't wait to make delicious recipes such as Pineapple Dole Whip from Magic Kingdom, Pizza Egg Rolls from Adventureland in Magic Kingdom, Mickey Beignets from Port Orleans, Blue & Green Milk you can find in Galaxy's Edge in Hollywood Studios, and the Grey Stuff served at Beasts Castle in Magic Kingdom! Today felt like a special day to break out the Mickey Waffle Maker. Everything tastes better when it's shaped like Mickey Mouse!



Mickey Waffles are a classic part of the Disney experience- not just because of the delicious taste, but also because of the iconic Mickey Mouse shape. SERVES 10

2 large eggs, separated

½ cup vegetable oil

2 cups whole milk

1 teaspoon vanilla extract

2 cups all-purpose flour

4 teaspoons baking powder

¼ teaspoon salt

¼ cup granulated sugar

¼ cup salted butter, melted




Preheat waffle iron for 5 minutes..
In the bowl of a stand mixer, add egg whites. Using the whisk attachment, whip on high until stiff peaks form about.
In a separate large bowl, whisk together egg yolks, oil, milk, and vanilla. Add flour, baking powder, salt, and sugar, and mix until combined. Using a spatula, gently fold in egg whites.
Preheat oven to 175°F and place a wire cooling rack on a baking sheet. Place baking sheet in oven.
Use a brush to lightly spread a little melted butter onto waffle iron. Scoop ¼ cup batter into waffle iron and cook according to the manufacturer's instructions.
When waffle is done, remove from waffle iron and place on wire rack on baking sheet in oven. Repeat with remaining batter.
